Introduction

Neotame is a synthetic high-intensity sweetener with a chemical name of N-[N-(3,3-dimethylbutyl)-L-α-aspartyl]-L-phenylalanine 1-methyl ester. It was developed by Pfizer and approved for use by the U.S. Food and Drug Administration (FDA) in 1993. It is extremely sweet, about 7,000-13,000 times sweeter than sucrose, and has the characteristics of low or almost no calories. It is widely used as a substitute for traditional sweeteners such as sucrose in the food and beverage industry.
